
I've been playing around with different "power bowl" ideas for meal prep. I tend to lean toward bowl concepts because they are easy to include every food group and you can switch it up to find your favorite combo. The thing that's been missing though, is a sauce. I love a good sauce. It just ties every thing together and adds a different set of flavors to your meal.
I looked up tons of ideas, and roasted pepper sauce always caught my attention. I took inspiration from a few different recipes to form my own concoction. Once it was done, I considered all the different ways I could incorporate this sauce in to dishes other than just meal prep. I can’t wait to experiment!
And might I say, It's just what I was missing!
I went ahead and roasted my own peppers. I used a yellow, a orange, and a red (cuz that's what I had in my fridge). I cut them in half and removed the seeds, placed them face down on a baking sheet and put them on the top rack of the oven at 400* for about 20 minutes or until they started to get a little dark.
The best part about this sauce is that it's so quick and easy. You just pop everything in a blender and blend until creamy.
Roasted Pepper Sauce
INGREDIENTS
3 Roasted Peppers (your color preference)
2 Minced Garlic Cloves
1/4 Cup Shredded Parmesan Cheese
1 Tsp Basil Leaves
1/2 Tsp Crushed Red Pepper
Salt and Pepper to taste
INSTRUCTIONS
Add all ingredients to a blender and blend until preferred consistency.
